Well hello ya'll!
I know its been more than a month since I last blogged but between working now full time, my now 3 year old, my hubby and working cakes in between all of that my days can get pretty full and of course things like my blog is pushed to the side. But I have still been working on cakes and other special projects here and there:) One of those special projects was getting my first call to action from the organization Icing Smiles. If you don't know the organization Icing Smiles and you are a cake decorator (novice or professional) you need to haul yourself over to their website to see all the great work they do! Icing Smiles is a non-profit organization that, "provides custom celebration cakes and other treats to families impacted by the critical illness of a child." So basically they hook up families with very sick children with bakers who they call Sugar Angels to create a special birthday cake (or cookies in some areas) for that child's birthday. It may not always be on the child's actual birthday (as in my case) due to many of these children are in and out of the hospital constantly so its a matter of working with the family's schedule. Well let me tell you.. I was soo excited when I got my initial call to action email for the PA Rep Susan! Since I signed up almost a year ago I have been sitting just waiting to create some yummy cake goodness for an Icing Smiles child. So you know when I finally did get my email I was all on board:)
My Icing Smiles recipient's name is Ronnie and very sweet 3 year old who has had a very hard life. Ronnie is blind and deaf as well as has quite a number of mental and physical impairments. He also during emailing his mom back and forth about the cake suffered a minor stroke. Well needless to say I told Ronnie's mom not to worry that I was going to create a nice cake for her son's 3rd birthday and she didn't have any thing to worry about on my end. She told me Ronnie loves Barney so that was the theme of the cake. With Icing Smiles we do have some restrictions in order not to bankrupt the bakers on the cakes we make so the cake couldn't feed no more than 40 people so I went right up to the 40 serving size by creating a 2 tier cake. In my initial design it was just a 2 tier but while baking I decided to throw in a smaller middle tier to add something extra to the cake. I made a 3D Barney figure and some birthday balloons with Barney holding one of them. Well I can tell you Barney is a difficult figure and his particular color purple is hard to match! But in the end I was very pleased with the cake and so was Ronnie's mom!

All About Swiss Meringue Buttercream
Hey Ya'll!
So from the title you can pretty much guess that I will be discussing Swiss Meringue Buttercream! Ohh my goodness I am absolutely in love with SMB (Swiss Meringue Buttercream). It is so silky and taste heavenly..it is a little cloud on a spoon..yes its just that good. Trust me when I say once you try it you will not want anything less!!! You will find many different recipes of SMB online but the base of the recipe is always the same...you heat egg whites and sugar to create a syrup and then you whip that into a meringue state. You then add in butter to make a light, fluffy buttercream that most cake decorators will tell you is hands down better than American Buttercream (the extra sugary stuff). There two other types of meringue buttercream (Italian and French) but I prefer SMB for the ease of it. It holds flavor wonderfully so you add simple flavors like vanilla extract or more complex flavors like fruit puree. It's simple enough in its concept that even a basic cake decorator can learn to make it by following the steps laid out.

With that out of the way...on to the buttercream!!
The first thing you want to do when making SMB is make sure all of buttercream making supplies are grease-free. You have grease in your bowl or your whisk when you go to make your meringue it will look kind of "soupy" and not very meringue. You also want to make sure that your butter (real butter people please) is room temperature to make the mixing easier. I open up each stick of butter and let it sit out for a couple hours to come to room temp.
Next you want to measure you sugar and egg whites. I don't have a picture of this step because its pretty easy. Follow the recipe I provided below with the measuring of the sugar. For the egg whites...I recommend fresh ones. You will come across some decorators who have had success with egg whites in a carton, but I have had NO success using them..so fresh is best. If there a decorator out there who has had success with carton egg whites please let me know the brand and I will give it a try because I hate wasting the egg yolks.
Once your sugar/egg white syrup has reached at heating point of 160 degrees (to make sure you fully pasteurize the eggs, some decorators say 140 degrees but I stick with 160 degrees to be on the safe side). Remove the mixing bowl from the pot and put it on your mixer and run the mixer on medium (7 if you have a KithenAid). The next photo shows the meringue after a few minutes of mixing.
As you can see its shiny and starting to peak. That's good. You want to mix your meringue for about 10 minutes or so until you reach stiff peaks and the bowl is cool to the touch. You will know you hit stiff peaks if when you stop the mixer, remove the bowl and the meringue on the whisk stays there. The meringue will also have fluffed up and thick. I don't have a picture of the thick peak stage but you get the picture from the one up top and my description.
At this point you want to add in the butter a pat at a time making sure each pat of butter is fully incorporated before add in the next one (no lumps). As you add in the butter, you will notice that the SMB will start to take on a curdled look to it..NO WORRIES..keep adding butter and mixing.
You see how it sticks to the knife..that is what you want. It is one of the best tasting buttercreams EVER!!! Don't believe me...ask a cake decorator who has made it before..they will tell you they love the stuff. Don't be afraid..dive in and try it. Once you go SMB you won't go back:) If you still have some questions about it or any stage I discussed above...please see one of the posts I linked to earlier. They explain every aspect about SMB.
Swiss Meringue Buttercream-makes 10 cups of buttercream
Ingredients
10 large, fresh egg whites (300g)
2 1/2 cups sugar
3 cups unsalted butter (I use salted so I omit the pinch of salt), cut into cut cubes
4 teaspoons pure vanilla extract or 1 tablespoon of vanilla bean paste
pinch of salt
Directions:
1. Wipe the bowl of electric mixer with paper towel with lemon juice to remove any grease. Add egg whites and sugar. Simmer over a put of water, whisking constantly until temperature reaches 160F degrees. If you don't own a candy thermometer, then continue whisking until the sugar has been completely dissolved and the egg whites are hot.
2. With your whisk attachment on your mixer, begin to whip until meringue is thick, glossy and the bowl is cool to the touch. Don't add the butter until the bowl is cool.
3. Start adding butter cubes, one at a time, until incorporated and mix until the SMB is silk smooth in texture. If your SMB is runny then put in the fridge for 15 to 20 minutes to cool down and re-attach until it comes together (meringue wasn't cool). Add your vanilla and salt until well incorporated.
-Keep in airtight container in the fridge for up to one week, leaving out at room temperature when needed. Re-whipping when need for 5 minutes.
-SMB can be frozen for 6-8 weeks. Thaw on the counter overnight and then rewhip for 5 minutes.

As this picture shows..my SMB is slightly pass the curdled stage.. its still looks slightly curdled but its starting to look like buttercream. Just keep adding your butter in a pat at a time until your butter is all gone. By the time you get to the last pieces of butter you will see a beautiful SMB come together. The picture below shows my SMB on the whisk. See how fluffy it looks but is sticking solidly to the whisk. That is what you want.
This is SMB once you have whipped all the butter together. It has a slightly yellow color to it (that is all the butter). It's light but holds its shape. You SMB is now done! At this one I would fill and crumb coat my cake if they are cooled at this point. SMB needs to be refrigerated if you aren't going to use it right away. You must note: when you bring SMB out of the fridge you have to let it come up to room temperature and run it through your mixer for a little bit.

Finally.... A Lorax Cake!
Good Afternoon Ya'll!
I hope you all are having a good day today, for us in Philadelphia it has been raining for the last couple of days and today is no exception. So on this rainy day I have decided to blog a little bit. I had been waiting all year to do a cake like this.. I have seen plenty of pictures on the internet from other cake decorators but no one had ordered from me until a couple of weeks ago! Yes folks, I finally got to do a Lorax theme birthday cake:) See for us cake decorators we love it when we get to do new characters or design we haven't done yet.. it gets kind of boring doing the same cakes. So when an old York client L, asked me if I could do a Lorax theme cake for his daughter I jumped at the chance to do it. I have been wanting to do a Lorax figure for a while now... of course he was the first thing I made for the cake. Of course I made some Truffula trees to go on the cake as well. I love the meaning behind the story and I think the movie was soo cute. I think kids are never to young to learn more about conservation efforts.
The only thing that dampened my mood when the cake was done was realizing now I have to drive 2 hours to deliver it back to York. So I packed up the cake. Jayden and myself and we made the trip back to York to drop off the cake. By the time I got back home it was already dark and half the day was gone so from that experience I have decided that unless its for a huge party cake or a wedding, I will be limiting by deliveries to York. It just takes up too much of my time to deliver just one cake. I love my York customers but doing that drive all the time is a bit much. Other than that, this cake was soo much fun to make.. I hope I get to make another so I can do something a little different.

Pink Passion!
Hi Ya'll!!!!
I am back after about a month of not blogging! The reason for the long delay is that I relocated. I am now a resident of Philadelphia:) We have been settled into our new place for about a week and half now and I have already done two cakes here. I am working on a third this week for a York client for her husband's 50th birthday. Oh I how love those kinds of birthday cakes. But back to the post at hand.... Pink Passion! Earlier in the month of October I had the pleasure of making a sweet 16 cake for a sweet girl, Brooke. Her mom came to me earlier in the summer to discuss her daughter's birthday cake. From the initial conception to the actual delivery of the cake, many things have changed but still the cake out great! Brooke is a dancer who loves the color pink and when I mean loves the color pink... she LOVES pink. So suggested that her cake be different shades of the color pink which she absolutely loved the idea. She also wanted to include something referencing to her being a dancer but that would fit into the overall design of the cake as well. So we decided to use silhouette of dancers in black around the bottom tier. This is also one of a few cakes in which I had to make sugar roses in various shades of pink. Now I love sugar flowers but making them can be a pain in the rear..but this time around I didn't mind it so much. Once you get an assembly line going it goes by fast.
When her mom met me to pink up the cake, her facial expression was all I needed to know that I got it right:) She later emailed me to let me know that Brooke loved it just as much as she did:)
Well that's it for now.. I should have another post this weekend for ya!

Changes are a coming!
Hey Ya'll!
This is just a quick note to let you know why I have been missing in action for the last two months..not only I have I been very busy with cakes and finishing up my wedding cake orders for the season... I am in the middle of packing to relocate to Philadelphia, PA!!! Yes I know my York,PA clients are NOT happy about this but it is a move that been have been planning for awhile now and the hubby got a transfer with his company so we are going:) I am excited for the business and what is to come doing cakes in a much bigger city. So please bare with me while I make the transition and I promise to try to get another post before the weekend is over to show some cakes.

Oh Baby Showers!
Hi Ya'll!
I have been doing a lot of caking lately so I have been busy but I have noticed that my baby shower orders typically come in clusters. I'll get a few scattered here and there and BAM! I'll client 3 or 4 clients asking about baby shower cakes in the same week. So I thought it would be fitting to do a post dedicated to baby shower cakes:)
First up we have the baby shower cake I just delivered this past weekend to the Springettsbury Township Park in Springettsbury, PA. It a really nice park and lots open space, so if you are an outdoor person and have a shower coming up I would recommend that location.
This cake really didn't have a theme, my client K saw a cake online and sent me the photo to replicate it. So you know how I feel about doing someone's else exact same cake so I put my whole little twist on it. The baby booties were different in that mind where hand made and not from a mold. I also made my gift box part of the cake a little different as well. The cake flavor was vanilla with vanilla buttercream.
The next baby shower cake I did a couple of months but since my photos were bad (need to get a better camera) I never posted them. My client actually sent me some photos yesterday when her sister in law wanted to place an order for guess what?? A baby shower cake for her niece:) So here are the pictures she sent me. The cake was an 11x15 sheet cake with an 8 inch square on top. For the life of me I can't remember what the flavors were but the theme was "Eat your Peas & Carrots" so I made the 8 inch square look like a garden with a hand molded baby (my babies look so much better now than this one) and some hand molded vegetables. The "dirt" was crushed oreo cookies.The cake was delivered to Shank's Mare in Wrightsville, PA. It is a store located on the bank of the Susquehanna River that specializes in outdoor equipment rentals and tours of the area. They also have a meeting facility upstairs that they rent out for events like baby showers!
The last baby shower cake was for a client D, I did about 2 weeks ago and was delivered locally to a bed n breakfast here in York City. The name of the bed and breakfast is Grace Manor B & B on West Market Street in York, PA. The inn so is cozy and has all of the detailing and sophistication of an earlier era. The cake in the shape of a lady's church hat in various shades of brown and beige with ruffle flowers and sugar beads. D also order cupcakes as well to go with the main cake which were decorated with little babies wearing hats.
So that is what I have been up to lately..more to come:)

Hubby's 30th Birthday!
Soo I have officially slacked off again with my blog! Great thing is have been busy, bad thing my blog has suffered. So I am going to work backwards starting today to get caught up yet again. Since today is my husband's 30th birthday I decided to talk about his cake and go back from there. So I have a huge wedding and baby shower this weekend so I couldn't give my hubby another party like last year so I decided to keep it simple and make a cake and surprise him at his job.
So I asked him what flavor and theme he wanted.. of course he said Amaretto (which has been his favorite flavor since he tried it) but he surprised me with the theme..Superman. I say, "Superman? Really??" and he says, "yes Superman!". So Superman it is.. I made a mini 2 tier cake (5 and 7 inch rounds) covered in blue fondant. The one thing I did differently was I made Swiss Meringue Buttercream for the first time.. and boy let me tell you..it is sooo freaking DELICIOUS!!! No lie! All family cakes will be made with this buttercream from now on and I will offer it to my clients now. It takes some work to make, but it is soo worth it. It has silky smooth texture and its not overly sweet..it just melts in your mouth. And I don't even like buttercream so that is saying something!
Back to the cake..so I made some stars, hand molded 30 and a the superman logo to on the cake. Nice and simple the way my hubby is:) He loved it so I am happy. Now off to make cookies, cake pops, and etc.. for this wedding.
